Ingredients for 4 people:
100 g potatoes, 300 g of fresh green beans washed, one white pumpkin half screen, 2 liters of Batuda (whole milk acidulated).
cleaned the pumpkin depriving the outer skin, seeds and filaments. Cut with a special grater for turnips and let in salt for about 2 hours. In the meantime, peel and cook the potatoes, then mash them in a blender and keep warm. Also cook the beans in a saucepan along with a carrot, a bay leaf, onion and celery. In a saucepan heat the Batuda, add the squeezed pumpkin of its water, the mashed potatoes and finally the beans with all their cooking water, taking care to remove all the aromas. Mix all ingredients. At this point, raise the heat and wait until the bubble, stirring frequently; cook for 15 minutes over very low heat. Season with salt and serve briza almost lukewarm.
